Omelet Sandwich
This is a perfect hunger fix sandwich that you can make in minutes. I love to serve it to my guests at breakfast or lunch...it is healthy, light and mouth watering.
Omelet Sandwich for One
fresh baguette 4 inches
2 eggs
1 ripe black mission fig
handful of baby/wild arugola
tomato - best that comes from local farm stand
olive oil
1 teaspoon butter
pepper
salt
- place the eggs in a bowl or larger cup and whisk them, add thinly sliced fig and a pinch of salt
- preheat pan to be very hot and place a spoonful of butter
- pour the eggs on the hot pan and hold the pan above the flame - gently but very fast shake it in and away from your body above the flame
- gently flip the omelet on the other side for a split second to cook but make sure not to overcook it
- have your baguette ready - I like to take the extra dough out
- pour some olive oil
- place arugola and tomato and the omelet between baguette
- add pepper
